(Makes about 12 cookies)
Ingredients3/4 cup unsalted butter, softened
3/4 cup brown sugar
2 tsp vanilla essence
1/4 cup water
3/4 cup all-purpose flour
1/4 cup wheat bran
1 1/2 cups oatmeal
1 1/2 cups quinoa flakes
1 tbsp coarsely ground flaxseed
1 tsp ground cinnamon
1/4 teaspoon salt
3/4 teaspoon baking soda
3/4 cup raisins or chocolate chips
PreparationPreheat the oven to 350oC.
In a bowl, using an electric mixer, cream the butter and brown sugar. Add egg, vanilla and water.
In another bowl, combine flour, wheat bran, flakes, flaxseed, cinnamon, salt, baking soda and grapes.
Add dry ingredients to previous mixture.
Divide the cookie dough on a baking sheet and make patties.
Bake in the centre for about 10 minutes.
