Quinoa squares with dates and pears

 

Garnish :

  • ½ cup of pitted dates

  • ½ cup unsweetened apple juice

  • 1 C. tablespoon butter

  • 3 to 4 pears, peeled, cut into cubes

  • ½ cup of flaked almonds

  • ½ tsp. nutmeg

  • ½ tsp. cinnamon

 

Background :

  • ¾ cup of pitted dates

  • 1 cup of quinoa flour

  • ½ cup unsalted butter at room temperature

  • 1 cup of quinoa flakes

  • ¾ cup unsweetened grated coconut

  • 3 tbsp. coarsely ground spelled seeds

  • ½ tsp. of vanilla extract

 

Garnish :

  1. In a saucepan, bring the dates and apple juice to a boil. Reduce heat to medium and let boil, stirring constantly, about 5 minutes. Use a mixing arm to obtain a smooth mixture. Reserve.

  2. In a skillet, sweat the pears in the butter. Remove from the heat and add to the previous mixture of dates.

  3. Add almonds and spices. Reserve.

 

Background :

  1. In a food processor, pulse the dates and flour until you get a grainy texture. Reserve.

  2. Whip the butter into a cream. Add the quinoa flakes, coconut, spelled seeds, vanilla, date / flour mixture and mix well.

 

Assembly:

  1. Distribute the bottom in the baking dish and press firmly, then spread the filling.

 

Bake for about 20 to 25 minutes at 350 ° F. Let cool and cut.
