Soy Guacaomole

SOY GUACAMOLE

 

Ingredients

  • 2 ripe avocados
  • 1/4 cup silken tofu
  • 1/4 cup plain Greek yogurt
  • juice of a lime
  • 1 tomato, diced
  • 1 red pepper, diced
  • 1 French shallot, chopped
  • 1 garlic clove, chopped
  • 1/3 cup cilantro, chopped
  • 1/2 tsp. tabasco
  • salt pepper

 

Preparation

  1. Cut the avocado in half, remove the core and place the flesh in a bowl.
  2. Using a fork, mash the avocado flesh with the lime juice. Add the remaining ingredients and mix well. Salt and pepper.
