Cranberry muffins

 

Ingredients

¼ cup of Naturist organic chia seeds

¼ cup unsalted butter, room temperature

2 tbsp. of chia seeds for 2 tsp. tablespoon of water

The zest and juice of a lemon

1 ¼ cup of almond milk

1 cup all-purpose flour

1 cup whole wheat flour

1 C. baking powder

1 C. ground nutmeg

1 C. 1/2 teaspoon ground cinnamon

1 cup of oatmeal

¾ cup of blond cane sugar

½ cup grated coconut

½ cup coarsely chopped walnuts

1 cup of frozen cranberries

 

Preparation

  1. Preheat the oven to 400 ° F.

  2. In a small bowl, combine the water and chia seeds. Reserve.

  3. In another bowl, stir in the ¼ cup of buttery chia seeds. Reserve.

  4. Mix the almond milk with the lemon juice. Reserve.

  5. In a bowl, sift the dry ingredients, add the oatmeal, sugar, coconut, walnuts, cranberries and lemon zest.

  6. Mix all devices together until smooth.

  1. Pour into muffin cups and bake for about 15 minutes or until a toothpick comes out clean.
