Cruciferous salad

 

Vinaigrette :

  • ¼ cup of plain yogurt

  • 3 tbsp. tablespoons of olive oil

  • 3 tbsp. rice vinegar

  • 2 tbsp. 1/2 teaspoon Dijon mustard

  • ½ tsp. cumin

  • ½ tsp. paprika

  • ½ tsp. teaspoon cane sugar

  • Salt and pepper

 

Salad :

  • 2 cups chopped Brussels sprouts

  • 4 cups of baby spinach

  • 4 cups chopped Savoy cabbage

  • 2 avocados, diced

 

  1. Mix all the dressing ingredients well and set aside.

  2. In a salad bowl, combine the salad ingredients and add the vinaigrette. To serve.
