Avocado mango salsa

AVOCADO MANGO SALSA

Ingredients

2 mangoes, peeled, pitted and diced
1 shallot, finely chopped
1 avocado, finely chopped
1/3 cup fresh, chiseled coriander
1/2 small jalapenos, seeded and finely chopped (optional)
the zest and juice of a lime
1/3 cup Le Naturiste safflower oil
1 tsp cumin
1 tsp grated fresh ginger

 

Preparation

Mix all ingredients in a bowl and serve on a white fish.

Mango is the most consumed tropical fruit after banana. Its orange flesh is a good source:

Beta-carotene
Vitamins B1, B2, B6 and E
Iron (1.2 mg/ 100g)
Fibers

 

It also contains tannins and mangiferin (especially in the core, peel and bark of the tree).
